Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter, softened
- 1/3 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet chocolate chips
- 6 large marshmallows (or 36 mini marshmallows)
- 4 whole graham cracker sheets
Instructions
- In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until well combined.
- In a separate large bowl, beat the softened butter and granulated sugar for 1 minute, then add the brown sugar and beat for another 30 seconds until creamy.
- Mix in the egg and vanilla extract until fully incorporated.
- Add the dry flour mixture to the wet ingredients and mix on low speed just until the flour streaks disappear.
- Fold in the chocolate chips by hand until they are evenly distributed throughout the dough.
- Scoop out 12 equal portions of dough; press marshmallows onto 6 of the balls and cover them with the remaining 6 portions, pinching the edges to seal the marshmallow inside.
- Break 3 graham cracker sheets into small pieces and press them into the outside of the dough balls.
- Chill the loaded dough balls in the refrigerator for 30 minutes while preheating your oven to 350°F.
- Place cookies on a baking sheet and bake for 11 to 13 minutes until the edges are golden brown.
- Crush the remaining graham cracker sheet and sprinkle over the warm cookies, then let them cool completely on the baking sheet to set.
